Veggie Parathas

Lately, I have been in the mood to try new things, explore new places, and learn as much as I can.

Each week, I am setting a goal to try at least one new recipe from a different part of the World. This week, I want to make something from India, and found this amazing recipe from the blog, Indian summer. Have you ever had veggie paratha's before? They seem like savory vegetable pancakes (I'm thinking zucchini pancakes) and I cannot wait to try them out!
