I cannot wait to try this Vegan Pumpkin Mac and Cheese Sauce! Oh wow does this sound so so good! I know cheese and vegan usually do not go together, but I think this sauce will be more of the exception and not the rule in the taste category! Won't you try it with me?
Check it out, and tell me what you think!

I am so happy Friday is here! Last night, I was up with a horrible stomach ache, and did not fall asleep until around 5:00 AM... Needless to say, I am craving sleep in a bad way. Enjoy your weekend, eat your veggies and get some good sleeping in!

As always, I am going to miss her, but I'm glad we were able to get some quality time in before she left. While we were walking, she asked me what I knew about Zinc and I totally froze. It was at the tip of my tongue and I could vaguely say that it's needed for protecting some organs and helps us look and feel better... but how much of that last thought really helps identifying what Zinc really does?
Of course, I had to look it up in The Food Bible to see what it was I was mentally forgetting, and this is what I found...
- Protects the Liver
- Great for keeping skin healthy
- Protects from free radicals
- Needed for a healthy reproductive system
Phew, I feel much better now knowing what Zinc helps with off the top of my head again! Here is a list of foods that you can get your Zinc from... Oh and just hollar if you have another health related question for me ... You better believe I'll be brushing up on minerals, vitamins and nutrition knowledge...
Food With Zinc
- Nori Seaweed
- Poppy Seed
- Sesame Seeds
- Tahini (mainly smashed sesame)
- Pumpkin seeds
- Wheat Germ
- Brown rice

Today is a beautiful day in Chicago - I cannot wait to come home later today and go for a run with John! Lately, I have totally had the decorating bug..it comes to me a few times a year, but I don't know yet what I am going to focus on this time. Hello Friday Friends! Time to celebrate the weekend once again... I don't know exactly what I will be up to, but I do know that I need to buy a new pair of boots, and I want to take another great bike ride with John. It really is amazing how long I have now live in Chicago, and still don't know entire neighborhoods... even more reason to go explore.
As you get ready, try to do something new with your look....why? well, why not!
OK here is your Friday word- enjoy and have a wonderful weekend wherever you may be.

I started a new book today (The Truth About Butterflies: A Memoir) and this was the quote that started the first chapter:
"There are things that we don't want to happen but have to accept, things we don't want to know but have to learn, people we can't live without but have to let go."
I read this quote over and over again. What powerful words they are.

Do you have an animal?
When I was in college I adopted Ballou, and didn't really know what I was in for. So much training, walking, chewing, peeing, pooping... so exhausting! Yes, training a puppy is not fun, but just one look at her cute face and I would melt all over again.
Now, Ballou is like an extension of me and I don't want to imagine life without her! The hardest part of having her now, is leaving her inside the apartment, all alone, all day. John and I have talked about getting another dog, but haven't really committed to the idea yet.
Do you think two dogs would make life easier or more challenging?

Whew! My weekend was a busy one. Lots of friend time, which is just the way I like it!
I have been slacking a bit on my workouts though and did not get to the gym like I wanted to this weekend... it's funny, once the Olympics started, I stopped working out to make sure I was around to watch them workout! Now that the Olympics have come to the end, I am going to get back in the gym, and this is an article to help kick-start my workouts- Enjoy!

(Love this white bikini, don't you?)
Sweet sweet summer is just starting to wind down for the year. As the weather changes from hot to warm, I realized how infrequently I was in a bathing suit this summer. Honestly, most days were just too hot this year for the beach.
I was hoping to relax (in my bikini) on the shores of Lake Michigan this weekend, but friends are in town, and my lakefront-relax day may have to stay on the back-burner for now. What will you be doing this weekend?
With whatever you do, make sure you do it well... and have fun while your doing it!

There are so many recipes that claim to be "the best ever", yet seem to fall flat when you make it at home. I know I shouldn't believe anything that claims the position of #1, and in the past, I have been mostly disappointed with what I've tasted.
So I should stop trying these recipes, right? Well, you can call me an eternal optimist, but I may just have found a recipe that holds up to its claim... Here it is; the best pancakes ever!

John and I went on an awesome bike ride on Sunday. We Traveled around Chicago and found wonderful side streets filled with beautiful homes. Our only real stop was to take in the view of the sailboats on Lake Michigan.
We ate dinner at a new Vietnamese sandwich shop, and went for ice cream after. It was one of those days that reminded me just how fortunate I am.
This beautiful world is simply waiting for us to explore it

I was sitting at my desk last night and glanced over at the mirror behind me. There I was, without makeup, sleepy from an eventful day, and content with the current moment... I realized every day, I am starting to love that person I see staring back at me more and more. .I decided to take a picture and capture that moment. I will use it to remind me of that thought.
Do you like what you see when you look into a mirror? Does the reflected you see back match the person on the inside?
Do me a favor sometime this weekend, and take a look at yourself in the mirror. Then, say three nice things about what you see. I know it may seem a bit awkward at first, but I think it is a great way to remember what you love and you.
I hope you have a wonderful Friday, and enjoy yourself wherever you may be.
Here is the word of the day!
Unanimity- everyone being of one mind; the state of quality of being unanimous.
*Synonyms: harmony, concert, unity

Thank the Lord It had hand sanitizer and tissues in my purse... hopefully that good luck will kick in and the rest of the day will be fabulous!
Here are some quotes that I thought were really great, that may help set your day off on the right foot (while remaining bird-poop free).
"Love and compassion are necessities, not luxuries. Without them, humanity cannot survive."
"Laughter is good for thinking because when people laugh, it is easier for them to admit new ideas to their minds."

How do you feel about this fire-wood wall? I love the way it looks, but wonder if it would attract more little bugs in the house... I do like the natural element wood brings to a room and I am sure we would use the fireplace a lot more if the wood was there as a reminder. Would you ever want a wood wall?
Have you been keeping up with the Summer Olympics?
Here are a few picture updates for today!
OK, this is not really an update, but I just want to say, if I could pick anyone to sit next to, it would be Michelle Obama! Per usual, she has showcased her fabulous sense of style.
Phelps with his brand new Gold! Watching him swim makes my heart race...
Part of the Royal family, Zara Phillips wins silver in Equestrian.
Not really an Olympic update again, I know... but don't you love seeing all the Royal cousins cheering her on? If I could not sit next to Mrs. Obama, sitting with Kate Middleton and Co.would be the next best thing!
